4 Rava Based south Indian breakfast recipes

Following a hectic week of school and work, the weekends were when my mother and I got together to experiment in the kitchen. There was nothing better than waking up late and whipping up something different for breakfast than toast with butter. Here are some of our favorite rava based south Indian breakfast recipes.

Upma

In most houses, upma is one dish that is a quick fix for lazy mornings. Breakfast doesn’t get easier or healthier than this.

You will need

  • 1 cup rava
  • 1 finely chopped onion
  • Chopped carrots
  • Peas
  • Chopped green chillies
  • 1 tsp mustard seeds
  • A pinch of turmeric powder
  • Salt to taste

Directions

For this recipe, you would first begin with roasting the rava on a dry pan.

  • Take the rava off the flame once it looks dry and crisp. Avoid it from turning brown.
  • Set the roasted rava aside and pour in a tablespoon of oil into the pan.
  • Add in the mustard seeds.
  • Once the seeds start crackling, throw in the onion.
  • Cook the onion until translucent and add in your carrots, peas chillies and curry leaves.
  • Toss it around for some time and add in the water.
  • Season this with salt. Taste the water and make sure it is slightly salty. This will be balanced once the rava is added.
  • Once the water comes to a boil, go ahead and add on the rava.
  • Stir it around to make sure its evenly distributed and avoid lumps.
  • Once the upma seems fluffy, cover the pan for about 3 minutes in low heat before you switch it off. 
  • Garnish with coriander.

Rava Dosa

This is probably one of the most popular breakfast out there. With a recipe easy enough, anyone can make this dish in a matter of minutes.

You will need

  • ½ cup rava
  • ½ cup rice flour
  • ¼ cup maida
  • Finely diced onion
  • Chopped curry leaves
  • Chopped coriander leaves
  • Salt
  • Cumin seeds
  • 1 tbsp of yoghurt and water

Mix all the ingredients and form a runny batter. Unlike regular dosa, rava dosa is poured evenly across the pan instead of spreading it like we traditionally do. 

Rava Idli 

Yet another popular breakfast dish in the south is rava idli and one of our favorite breakfast recipes.

You will need

  • 1 cup rava
  • Mustard seeds
  • Chana dal
  • Cumin seeds
  • Grated ginger
  • Curds
  • Water
  • Salt
  • Coriander leaves

Directions

  • Adding mustard seeds into a pan with oil
  • Add in the cumin seeds, chana dal, and grated ginger.
  • After a minute or two, add in the Rava and toast it until it’s fully coated in the oil and turns crispy. Once again, don’t let it turn brown.
  • To this mixture, add in the salt, yoghurt, and water to form a smooth batter.
  • Let this mixture sit for 30 mins.
  • Grease your idli molds with oil and pour the mixture.
  • Steam as long as needed and your soft fluffy Rava idli is ready!

Rava Paniyaram

Paniyaram is a dish my mother would make as snacks for my brother and me with the leftover idli batter. However, the alternate recipe for paniyaram using semolina is just as simple. You will however require your paniyaram pan for this dish,

You will need

  • 1 and ¼  cup rava
  • ¾ cup yoghurt
  • Diced Onion
  • 2 or 3 cut chillies
  • ½ an inch of ginger chopped
  • Water
  • Salt
  • Cubes of coconut
  • Curry leaves

Directions

  • we first mix the rava with the yoghurt
  • To this we add some water. Make sure the batter is thick
  • Add salt to the batter and mix well
  • Add in the onions, chillies, ginger. Coconut cubes and curry leaves
  • Mix well and leave aside for 10-15 mins.
  • Prepare the paniyaram pan by greasing the pan with vegetable oil.
  • Pour the batter into the warm pan.
  • Cook the batter on one side until the bottom turns golden brown.
  • Flip the paniyarams to the other side so that it can be cooked on that side as well.

Serve the paniyarams hot with your choice of chutney or even tomato ketchup
